An easy one bowl cake recipe!!!

Yesterday PaisleyJade's Mocha cupcakes led me to...

 
{How impressive is that!}

Where I discovered her great (& easy!) one bowl cake recipe!!!

Meredy says she uses this recipe for everything from bar cakes, cupcakes, to her spectacular rainbow cake. She adds cocoa to make it a chocolate cake, orange zest for orange cake etc
 
 
So I had a go! Yesterday I used the abundance of tangelo's we have falling from our tree to bake a 'Tangelo Cake' {Above}

 & today, a chocolate cake for afternoon-tea as Choppy had a friend over after school. 
 

I know, a bit too much cake eating going on around here :)

MEREDY'S ONE BOWL CAKE RECIPE:

Ingredient's:
1 and a half cups of Self Raising Flour
1 cup white sugar
1/2 cup of milk
2 eggs
125g (4 oz) butter, melted
1 tsp vanilla extract.

Preheat oven to 180oC conventional or 160oC fan-forced.
Put all ingredients in a bowl and beat on medium speed for five minutes.
That's it!!

Cook for ?? (It took 35 min's in my funny old oven)

Isn't it awesome! I use it all the time for quick cakes and cupcakes now. Must try your tangelo cake sometime!

Tangelo! Love it:) I'm so pleased you're getting some mileage out of that recipe...I added frozen raspberries to it this week and made raspberry cupcakes, sprinkled icing sugar over the top and lovely served with creme fraiche or sour cream. Meredy xo
