Beef Nachos Recipe

On Sunday night we had 14 kids and a bunch of adults come over after church for nachos & dessert  = easy prep......and lots of laughs after!! (The recipe that follows more than doubled to feed the troops)

Beef Nachos:
500 grams of beef mince
1 onion
1 teaspoon of cumin
1 teaspoon of ground coriander
1/2 teaspoon ground chilli
410grams can of crushed tomatoes
2 Tablespoons of Tomato Paste
400 gram can of kidney beans
Salt and Pepper

~You know the drill: Brown the onion and mince, and then add in the rest, and cook for a while. I normally put the beans in a little later so they don't go mushy.

~Serve on corn chips and with a sprinkle of cheese on top (Which you can then put under the grill or in the oven for a bit if you want, until cheese is melted)

~Dollop on some sour cream and extras of your choice ie avocado, chopped red peppers, tomatoes, spring onions, guacamole...

~Dig in...no fork required!
