Sticky Date Pudding Recipe

"I love you more then Stcky Date Pudding with ice-cream, and that's ALOT!" -A daughter expressing the hugeness of her love to her mum!!

Sticky Date Pudding Recipe:
 
Ingredients:
180g of dates, pitted and roughly chopped
1 teaspoon of Baking soda
300 mls boiling water.
60 grams of butter
3/4 cup of brown sugar
2 eggs
1 cup of Self Raising flour
1/2 teaspoon of vanilla

Sauce:
3/4 cup Brown sugar
150 mls cream
Vanilla bean or extract
50grams of butter

Preheat the oven to 180
Lightly grease an 18cm tin

~Place the dates and water in a pot and bring to the boil. Remove from the heat and stir in the baking soda
~In another bowl beat the softened butter, sugar and eggs until they are light and fluffy
~Gently fold in the flour, dates and vanilla.
~Pour the mixture into the cake tin. and bake for 30-40 minutes
*To make your cake a total pudding sit the tin in a baking tray of water when it's a cooking; the water about 1/3 of the way up the tin.

Now for the sauce: Make it just before you serve the pudding so its deliciously hot and sticky!
Throw all the ingredients into a pot, bring to the boil and then simmer for 5 minutes.

Cut the pudding into chunky servings and pour the sauce over top. Serve with a scoop or two of ice-cream= Winter Delicious-ness!
