Lemon Cake Recipe ... with lemon curd!

Wonderful being in NZ!! NEED though to write down the recipe for mum's Lemon Cake before I fly home tomorrow...

Lemon Cake Recipe: (It's a big one)
Cake:
250g softened butter
2 cups sugar
6 lightly beaten large eggs
2 cups of flour
2 teaspoons Baking Powder
4 teaspoons finely grated lemon rind
1 cup light sour cream

~Heat oven to 160 degrees
~Cream butter and sugar until light and fluffy
~Add eggs and lemon rind and blend well
~Fold in flour and BP alternately with sour cream
~Pour into greased/lined big round tin and bake for 45-55 minutes
~After baking pour on the glaze

Glaze:
Stir the juice of 1 lemon and 1/4 cup of sugar over a low heat until sugar dissolves.
Bring to the boil. Remove from heat & cool

Serve your Lemon Cake with whipped cream and lemon curd...

Lemon curd Recipe:
125g butter
250 g sugar
2 lemons
2 large eggs

~Melt the butter gently into the sugar
~Grate the zest of the lemons
~Slowly add the zest and lemon juice into the butter mixture
~Beat the eggs and gradually add them, stirring all the time
