After tasting Kathy's perfect cheese scones in NZ and watching home-viewer Gavin making them on Sunrise this morning, I decided to have another go (Past attempts dismal!)
Scone Recipe:
Ingredients
1 egg
2 dessertspoons caster sugar
1/2 cup thickened cream
1/2 cup skim milk
2 cups self-raising flour
Extra flour for rolling on bench
Method:
Heat oven to 180C and lightly grease a lamington tin or baking tray
Whisk the egg and sugar until combined, then stir in the cream and milk
Sift the flour into the mixture and combine until mixture resembles soft dough
Place dough in a bowl covered in a warm place for 10 minutes and then turn onto a lightly floured surface and knead gently until smooth\
Pat dough to 2cm thickness and cut into rounds of approx 5cm
Place onto tray
Cook for 10 to 15 minutes until golden brown and serve warm with jam and cream.

Haha what a crack up!
I love scones... and infact just this week made some cheese ones.. Olivia has asked for one instead of sandwiches 2 days in a row. I'm good with that! I found another recipe for other savoury type ones to try for her. If I can avoid making sandwiches with scones - yayness!
